Start by removing the edges from each slice of sandwich bread.
Then cut a few thick slices of mozzarella and lay 1-2 out of 4 slices of bread.
Also add 1-2 anchovy fillets.
Then close with another slice of bread, crush your "sandwich" well with your hands so as to seal the sides and cut it diagonally to obtain 2 triangles.
Beat the 2eggs on a plate.
At this point pass the triangles in the flour, then in the eggs and finally in the bread crumbs.
If you want to get even better mozzarella in carrozza, you should do well 2 passes.
Preheat plenty of seed oil in a saucepan and once it reaches the temperature immerse in 2 triangles at a time.
When they are all ready, add salt, pepper and serve these delicious Italian pearls!
