To enjoy this delicious coffee custard you will first have to heat the milk in a saucepan with three tablespoons of sugar and the vanilla bean.
In the meantime, beat the egg yolks in a bowl until frothy. Add the sifted starch to the eggs and mix with a whisk.
Now remove the vanilla pod from the hot, but not boiling, milk and pour it into the eggs, stirring quickly with a whisk.
Add the teaspoons of freeze-dried coffee and wait for it to dissolve while continuing to stir.
Transfer the liquid into a small saucepan and heat over a low flame, stirring with a whisk. After a few minutes the mixture will have thickened, so remove it from the heat and pour it into a few cups.
Place them in the fridge for 1-2 hours, or until they are well chilled. When ready to serve, garnish with a generous amount of dark chocolate chips or flakes if you prefer. Enjoy your meal!
