- 2 eggs
- 4 tbsp of Torciano Extra Virgin Olive Oil
- 7 tbsp of milk
- 1 oz of grated Parmesan cheese
- 4,5 oz of flour
- 1/2 sachet of baking powder
- 14 oz of zucchini
- 10 oz of mozzarella cheese
- Grated cheese to taste
- salt, pepper and nutmeg
To prepare this stringy and creamy zucchini flan break the two eggs into a bowl and beat them together with the oil and milk.
Then add the flour, the grated cheese and half a sachet of baking powder for savory pies.
Season with salt, pepper and nutmeg.
Preheat the oven to 180 ° C (356 ° F).
Then grate the courgettes in julienne form and add them to the mixture.
Cut the mozzarella into cubes, remove excess liquid and add half of it to the bowl.
Pour everything into a hinged pan, level and garnish the surface with the remaining mozzarella. Then add also some grated cheese.
Bake for 40 minutes and serve hot, so that the mozzarella runs and surprises the guests!
