Strawberry Risotto recipe
I tried to cook this rather unusual risotto because I wanted to experiment, combining two ingredients that I love madly: rice and strawberries. The result was very pleasant, but I must admit that it was a particular combination that probably not everyone will like. In any case, if you are also a fan of weird risotto, this is the recipe for you!
Strawberry Risotto recipe
Ingredients
- Vegetable broth (1 red onion, 1 white onion, 1 carrot, 1 celery stalk, 1 tomato and 1 potato)
- 250 g rice
- 1/2 onion
- 1/2 glass white wine
- 200 g strawberries
- 60 g stracchino or better goat cheese
- olive oil
- salt and pepper
Instructions
- To prepare this delicious strawberries rice you have to make a vegetable broth: so wash the vegetables and clean them. Place them in a large pot and cover with water. Let it boil for 50 minutes and when cooked add salt and pepper. In conclusion, with a colander, filter the broth to collect all the vegetables.
- Then chop the half onion and brown it in a pan with a few tablespoons of oil.
- Once golden, add the rice and toast it for about 2 minutes.
- Finally, blend with the white wine.
- Pour in about 2 ladles of broth.
- Cook the rice by pouring a few ladles of broth every time it dries and, when cooked, season with salt and pepper.
- Then add the strawberries cut into small pieces and mix everything with the cheese.
- Serve and taste this weird risotto!
